Ciao Baby Recipe

For those of us in the northern hemisphere the summer is upon us. Sunny days and longer evenings give us a chance to enjoy late nights of barbeques and cocktail parties, so now we begin our series concentrating on cocktails which characterise this fine season.

Ciao Baby Recipe


You might expect to see certain drinks in the summer for any amount of reasons. Colour, presentation and the fruit used are all important aspects. The first we look at then is the simple and famous Caio Baby, a smooth and fruity number which can be given extra kick with larger helpings of rum.

What you need:

Dark Rum (1 oz)
Grenadine (1/2 oz)
Strawberries (2 oz)
Collins Mix (1 oz)

If you can't get your hands on any Collins mix, we'll cover later just how to make your own. The vital ingredients are gin, sugar and lemon, so add more of this to make the Caio Baby that little bit more bitter.

How to make the Caio Baby:

Blend the strawberries, adding the rum first followed by the grenadine and Collins mix. Blend all together and serve up in the glass of your choosing. To make the Caio Baby even more summery put some ice through an ice-crusher and serve the smooth mix over the ice in a glass. The colour should be a deep red when served, and feel free to garnish with chopped fruit (strawberries, grapes etc).
