Pineapple Daiquiri Recipe

Continuing our series exploring all the possibilities surrounding frozen cocktails, we present to you today the Pineapple Daiquiri. It isn't quite as famous as its strawberry counterpart, but if made with the right amount of care and attention it can be even more rewarding.

The frozen cocktail is not something which you find in any establishment other than the most dedicated of cocktail bars. It may be down to the cost of keeping ice in the freezer for crushing, or the time that it takes, or indeed the skill level it requires. They are often more rewarding than non-frozen versions though, and more enjoyable on a sunny afternoon when a cool, slow beverage is what you need.
How to Make the Pineapple Daiquiri
Blend four large pineapple chunks. Stir some sugar into the mix (about half a teaspoon), and add 1 1/2 oz of white rum. Blend briefly, adding lemon or lime juice (1-2 tablespoons) before the mix is allowed to settle. Shake, and serve over some crushed ice in a champagne flute for added style!
